The Back Alley bakery is located on an alley behind 609 West 2nd St. (between Hastings Ave. and Denver Ave.) in historic downtown Hastings, Nebraska. Our facility is small, housing a dough preparation and proofing room, a sales room, and one massive oven. We built the oven using plans from Alan Scott, who has inspired oven-builders all over the world. Mr. Scott provided more than just the design for the oven, he also provided needed encouragement when we were dealing with city officials that were not accustomed to our unconventional method of baking bread, saying “in the end, common sense and good will will prevail." And he was right!
